2026 Harvest — Alentejo, Portugal

The 2026 olive oil harvest, explained

Great olive oil can't be made on demand — it follows the olive. Here is exactly what happens between now and the moment a bottle arrives at your door, so you know what you're signing up for before you join the waitlist.

    October – December 2026

    The harvest in Alentejo

Olives in the Alentejo are picked at their peak in late autumn. We work with a small family grove, and the fruit goes from tree to press within hours — that speed is what keeps the oil fresh, low in acidity and full of flavour.

    January – March 2027

    Pressing & bottling

After picking, the olives are cold-pressed within days. The fresh oil then rests and settles before we bottle it in small batches. Nothing is blended, refined or stored for years — this is the new harvest, straight from this season.

    Your personal payment link

The oil is bottled and ready. Everyone on the waitlist gets one email with a personal link to pay for their bottles — the first batch is limited, so earlier signups get first pick.

    Shipping to your door

Once bottling is complete, every paid order is packed and shipped. This is why all bottles ship in April 2027 — we only send oil from the new harvest, never stock from an older year. For the first batch we plan to hand-deliver orders from Portugal ourselves; we confirm the details by email.

Questions people ask us

Why does shipping take until April 2027?
Because the oil doesn't exist yet. The olives are harvested in late 2026, pressed and bottled over the winter, and only then is there anything to ship. Every bottle you receive comes from the new harvest.
Do I pay when I join the waitlist?
No. Joining is free and without obligation. In March we email everyone on the list a personal link to pay for their bottles, before the oil goes on general sale — the first batch is limited, so earlier signups get first pick.
What if the harvest is smaller than expected?
Olive harvests vary year to year. If the crop is small, paid orders are fulfilled in the order people signed up, and anyone we can't supply is refunded in full.
